March 2014Culinary Science Investigations (CSI) is one of the leaders in the new cutting edge field of Food Pairing Research which uses the scientific principals of chemistry and medicine to combine dominant matched flavor compounds to enhance and intensify the taste experience for the consumer. Not to be confused with food matching, this new area of culinary investigation helps take the guess work out of menu creation for food professionals. CEO Larrian Gillespie MD brings her extensive medical and pharmaceutical background to the culinary field where she has studied with world renowned chefs in both the USA, France and Italy. She consults with chefs, restaurateurs, bartenders and catering companies on food and alcohol pairings, while also creating products for culinary professionals to incorporate into their own recipes to maximize flavor impact and profitability. CSI is also involved in on-going research into food and diet as it relates to health. Larrian is speaking at "The Art of Catering Food" conference in Atlanta, GA August, 2014 on "Blending the Art and the Science of Flavor" and is featured in the July-August issue of Catersource Magazine.
